5 DAYS GLUTEN FREE EATING: DAY 1

So here it is DAY 1:
Breakfast: Gluten-free wanna-be cheerios with farm fresh 2% milk in glass bottle and a banana. Simple. I'm not trying to win a competition for world's best fed kids just feed them;)
Ingredients: 
  • 3-5oz. Gluten-Free cereal/per bowl
  • Cow/Goat milk: 1/2 cup/per bowl 
  • 1 banana per child

This milk is served in a glass bottle which to me hopefully means no BPA plastic coating and second when you bring it back to the health food store they'll give you $1.50 off your next milk purchase.

The tiny queen bee has a dairy allergy as far as I know, so she drinks goat and/or coconut milk and doesn't mind a bit.
Snack: Fruit and veggie smoothies. Made the tiny queen bees first. Some of these ingredients may be a little different but what she doesn't know can't hurt her.
Ingredients:
  • 1/2 banana (the riper the better)
  • 5 frozen strawberries
  • 2tsp Whole grain rice cereal by Earths Best mixed with...
  • Earth's Best Summer Vegetable Dinner
  • 1/2 cup-ish goat milk for TQB and 1 cup of 2% milk for the boys' smoothy
  • 1 kiwi adds a lot of sweetness
  • (optional) 1 egg white
  • magic bullet or blender, whatever you have on hand
  • 1/2 cup Lassi (contains dairy)

Begin by gathering all your ingredients.

 Summer vegetable dinner has a lot of really great gluten-free ingredients that add the extra veggies your kids might be missing in their daily diet. Its made with water, corn, zucchini, green beans, brown rice, carrots, garbanzo beans, canola oil ALL organic.

Mix 2 tsp of the rice cereal into the baby food before adding it to the magic bullet. This makes the smoothy a little more filling so they really feel full. Quality over empty carbs like crackers.







 Add a little fruit to make it taste sweet and look pretty so its appealing to their eye...wink wink

Because the Tiny Queen Bee has an allergy I use goat milk instead of cows milk. When cooking with it you really don't taste any difference plus it contains the enzymes to help with healthy digestion. HooHoo.

There are some things at Costco that are really a great deal with a coupon. I picked this up a year ago. Used it a lot when I first got it then not so much during this winter but it works great and is easy to use. It is very easy to clean and is going to become my new best friend in the kitchen.

Next use a sippy with big hole openings or for bigger kids skip the lid. Sometimes the fruit makes this treat very chunky.

Lastly, a double batch for the boys.

This is Lassi. Kids need a lot of pro-bacteria to strengthen their immune system and help with regular healthy digestion. Lassi is an Indian yogurt drink that gives you both. I recommend the strawberry or orange flavor, it's so good. It tastes like smooth creamy orange juice.

Lunch: For lunch again I kept it simple. The kids enjoy pasta and sauce so that's what I made.
Ingredients:                                        Feeds: 3          Bake Time: 12min.
  • 13oz. Roasted Garlic Pasta Sauce
  • 6oz. Brown Rice Pasta cooked
  • Fresh grated Parmesan cheese
Made with tomato puree, diced tomatoes, cane juice, garlic, salt, EVOO, onions, parsley, basil, oregano- ALL organic.


 Dinner: Chicken nuggets, rice, veggies.
Ingredients:            Feeds: 4      Prep Time: 10min.       Bake Time: 15-17min chicken at 350, 1 hr. rice
  • 8-Chicken tenders
  • 2 eggs, slightly scrambled
  • 1 cup Gluten-free bread crumbs
  • 1 cup brown rice, salted
  • Veggies: carrots, celery, broccoli, etc.
  • rice cooker 
  • 9x13 glass pan sprayed with non-stick cooking spray
  • Ziploc bag 
Before you start the chicken get the rice ready and rolling because it takes longer to cook. I use my rice cooker but a pot works well too. Mix 1 cup of rice and 1.5 cups of water. Cook 1 hour. *Brown rice takes longer than any other type of rice. Preheat oven to 350.

Found these ingredients at Earthfare. It's so easy to tell that its GF and there a lot of great recipes I will be trying from the Glutino website.
Rinse off tenders with water, dip them in scrambled egg in bowl then drop them in a Ziploc bag containing bread crumbs.

Place tenders in 9x13 and put on middle oven rack. Check at 12 min to see how close to being done they are. Slice into one and if its white they only need another minute or two depending on thickness of meat.   
If kids do well with these simple meals throughout the day then they are sometimes rewarded with a treat. Mom and Dad don't mind either ;)
 
So that's it. Like I said the first few days are just learning about these GF foods that are not all that different from the old ones we ate. Keep it simple then move into more complicated and delicious recipes.

Full of Life, Full of Love
