5 DAYS OF GLUTEN-FREE EATING: DAY 2

Breakfast: Mighty Muffins 
Ingredients:
  • 1/2 cup sugar (premium pure cane sugar)
  • 1/2 cup applesauce
  • 1 1/2 cups milk (coconut, soy, rice, cow)
  • 1 tsp. vanilla
  • 2 Tbsp. oil (extra virgin)
  • 1 cup White Rice Flower
  • 1/2 cup Tapioca Flour
  • 1/2 cup Potato Starch
  • 1/2 cup Gluten Free Might Tasty Hot Cereal
  • 1 1/2 tsp. baking powder
  • 1 1/2 tsp. Xanthan Gum
  • 1/2 Cranberries (we used raisins)
  • 1/2 walnuts, chopped (optional) 
 Preheat oven to 350. Spray muffin tin with non-stick spray. Mix together sugar, oil, vanilla, applesauce and milk. In separate bowl, combine flours, cereal, baking powder and xanthan gum. Add dry ingredients to wet and stir together. When batter is almost blended, add cranberries and walnut. Stir ingredients until just blended, careful not to over mix. Fill muffin tins 2/3 full and bake for 22-25 minutes. Makes 12 muffins.

Earthfare cane sugar, Earthfare organic apple sauce, EVOO, Costco vanilla, SO delicious Coconut milk.

 I will admit that to buy all these flours was a little pricey but once you have them, you have them so its worth it to me.


























We used raisins in our because that's what I had on hand.
Lastly, were the muffins a success. Yes! Actually they were so filling that my kids ate only one each, then later asked for them again for snack time.

Add a little "butter" and you have a great breakfast!

Lunch: Good old PB&J
Ingredients: 
  • Gluten-Free Bread
  • Peanut butter 
  • Jelly 
  • Melon chunks 




Yes this is actually the shot I took, he's such a ham, ha ;)
Snack: String cheese, almonds, apples, 'cookies' (mom enjoys this too!)
Ingredients:
  • 1 stick string cheese
  • small handfull of roasted non-salted almonds)
  • 1 small apples
  • 2 Gluten-Free 'cookies'

Ok I have to admit the Jr. didn't really eat his nuts but the other two did. Jr. is more of a pistachio eater. And the tiny queen bee didn't really eat the string cheese but she's lactose intolerant-however she wanted to it but that's another story.

These are SOOO delicious, give them a try!
Dinner: Hot Dogs, Apple straws, baked beans, watermelon, salad.
Ingredients: 
  • 8 Coleman All-Beef reduced sodium hot dog (they are gluten-free)
  • Hot dog buns
  • Watermelon cut into 1/2" chunks
  • 1/8 c Bush's Baked beans
  • Mixed green salad (with any veggies you like)
Believe it or not but some meats contain gluten and/or casein which comes from dairy, Coleman contains none. 

I found these Tapioca and Rice flour hot dog buns in the frozen section at the natural food market. They taste a little like sour dough bread. The other two kiddos don't eat hot dog buns with their hot dogs.

These ARE NOT gluten-free so only my little engineer and tiny queen bee ate these but still they are delicious and a nice alternative to fries or chips. Unfortunately I forgot to get pics of the kids grubbin down.

A Mother's Prayer

Lord bless my home and anyone who enters. Lead me daily so that I am always aware of You! Whether educating my kids, cooking or cleaning may my attitude always be that of a servant. Give me the words to guide my children to You, to know You, Your character and love You, Lord. Please teach to have patience and to always be learning. Lord mold me through each stage of life so I am continually growing and pursuing You no matter what. Full of Life, Full of Love

"The spirited child-often called "difficult" or "strong-willed"--possesses traits we value in adults yet find challenging in children. Research shows that spirited kids are wired to be "more"-by temperament, they are more intense, sensitive, perceptive, persistent, and uncomfortable with change than the average child." It seems as though we have three, and they are very much like me. What does this mean? I need to be compassionate, consistent, confident, controlled, all with a gentle yet firm approach. Yes my plate is full.

Motherhood: A rigorous training ground

What an awesome responsibility mothers have to their children. Cultural stereotypes promote the idea that giving birth miraculously endows women with kindness, compassion, and goodness. But we all know better. Many of us can witness that we are made more aware of our weaknesses and impatience after becoming mothers than we were before. Godliness and generosity are not prerequisites of giving birth; they are characteristics that God hones and whittles into our character over time. Motherhood provides a rigorous training ground where we can display practice and model the disciplines of love, honesty, and compassion before our children. --Rebecca Laird
